Cotechino is a full flavoured cooked pork sausage made with pork rind from Modena. Traditionally eaten with lentils on new year's eve to bode a money and health for the time ahead.  Leoncini strictly follows the tradition and regulations of the Modena Cotechino Consortium. This monster of a sausage comes vacuum packed and pre-cooked, boil it in its wrapping for 25 mins and enjoy with Bartolini lentils.
