Guanciale is the posh cousin of bacon. This meat is rubbed with salt and spices and cured for three weeks until it loses approximately 30% of its original weight. This process gives guanciale a distinct flavour that is stronger in spices than other pork products and takes your stews or pasta carbonara to another level
