Mortadella is a large Italian salume made of finely hashed or ground heat-cured pork, which incorporates at least 15% small cubes of pork fat and is traditionally flavoured with black pepper grain, pistachios, truffles. This truffle mortadella punches enough flavour to be eaten on its own.
