This gold label 15 months matured pecorino Toscano from Pienza is the Ferrari of pecorinos. Made by Fattoria Buca Nuova in Pienza between the months of February and May when the milk has a richer taste. The cheese skin is covered in olive oil during the maturity process delivering a complex and strong taste.
