Raschera is a hard, semi-fat, unpasteurised cow's milk cheese that comes from Piemonte, Italy.  The cheese is matured for at least a month to develop a fine and delicate flavour. It has an elastic texture and is dotted with irregular holes throughout the cheese. Great for risotto and table cheese.
