It is a traditional pork cold cut made from the neck muscle. Capocollo di Martina Franca comes from Puglia. It's delicately spiced and smoked in flavour with a tender, fatty texture. It goes well with stracciatella or burrata cheese as well as sun dried tomatoes and grissini.
